Pineapple Tacos

    Here is a great kid-friendly meal that you can throw together in the morning or even the night before, and when you walk in the door after a long day, you can have a hot meal ready in just15 minutes. As a bonus, the fresh cilantro (also sometimes called coriander) is a natural anti-inflammatory and detoxifier. If you’re not fond of the flavor, you can substitute fresh parsley for a milder dish.

     

    Ingredients

    1 onion, diced

    1 1/2 cups pineapple, diced

    1/4 cup chopped fresh cilantro

    2 cloves garlic, minced

    1 can of black beans

    1 tbs chili powder

    1 tsp cumin

    1 tsp oregano

    1 tsp pepper

    3/4 tsp salt

    corn tortillas

     

    Directions

    1. In a large Ziplock bag, add all ingredients except the black beans and corn tortillas. Massage everything around inside the bag until it is well-mixed.

    2. Heat a small amount of oil in a very large sautee pan, and empty the contents of the bag into the pan, stirring frequently until onions are translucent.

    3. Serve with black beans in 100% corn tortillas for a gluten-free fiesta, or make the meal SCD/GAPS-legal by omitting the canned beans, and serving in Julian’s Paleo Wraps (made of 100% coconut.)
